Preheat oven to 350 degrees. Grease and flour 9 x 13 pan
16 oz. package of mochiko (sweet rice flour)
2 1/2 cups sugar
1 tsp baking powder
1/2 cup butter, melted and cooled
2 1/2 - 3 cups milk
5 eggs, beaten
1 tsp vanilla
1 cup flaked coconut
Combine mochiko, sugar, baking powder. Combine butter and remaining ingredients. Stir carefully into mochiko mixture. Mix well. Pour into prepared pan. Bake for one hour, cool and cut into squares
